Pineapple Zucchini Bread

Pineapple Zucchini Bread:
Pineapples... Has anyone called you a pineapple head having seen you eat too many pineapples? Well people at my work place called me so. I don't even look like this guy


Anyway, I got a little embarassed with people calling me pineapple head. So I decided to try something else, with pineapple in it (concealed that is). I tried pineapple flavoured cream biscuits, pineapple juice poured inside a coke can and a few other stuff that I am not really proud of.

Then it hit me, why not Pineapple Zucchini bread. So I did an extensive search in books, articles in magazines, online sites and finally found an easy way to make some. So here is how you make it.


Things needed: (to make two 8 inch loaves)

1. 2 cups zucchini, grated

2. 1 1/2 cups chopped walnuts

3. 3 teaspoons cinnamon

4. 3 cups flour

5. 2 cups sugar

6. 1 teaspoon baking soda

7. 2 teaspoons vanilla

8. 1 cup vegetable oil

9. 3 eggs

10. 1 teaspoon salt

11. 1/4 teaspoon baking powder

12. 1 1/2 cups chopped walnuts

13. 3 teaspoons cinnamon

Why do I keep forgetting the main ingredient all the time!!!

14. 1 can pineapple 8 ounce, drained 

How to make:
1.In a big bowl, beat eggs until foamy.

2.Stir in zucchini, sugar, vanilla and oil.

3.Add flour, baking powder, baking soda, and salt.

4.Then add pineapple and chopped walnuts.

5.Lightly grease loaf pans and pour mixture into them.

6.Set oven to 350 and bake for one hour.
