Bahamas Zucchini Bread

Bahamas Zucchini Bread:

Let's try something different this time. I mean all our dishes are different in one way or the other. But let's try something more exotic, surreal, something Carribean.


Things you'll need:

1. One cup of white sugar.

2. 
One and a half teaspoons of baking powder.


3. One cup of whole wheat flour.

4. Three eggs.


5. Two bananas, squashed.

6.
Two cups of general (all) purpose flour.

7. 
One cup of brown sugar (packed).


8. Two teaspoons of vanilla extract.

9. One cup of walnuts. (chopped)

10.
One teaspoon each of salt and baking soda.

11.
Half a cup of applesauce.


12. Two and a half cups of zucchini (shredded)

13. Half a teaspoon of nutmeg.

14. Half a cup of coconut (grated well).

15. 
Half a cup of cooking oil.

16. T
hree teaspoons of cinnamon powder.


That's a lot of ingredients isn't it? But the taste of the resultant dish is really worth every penny spent. This is certainly not a dish to be tried at home, when you are thinking of doing something with whatever is left at home. You need to prepare all that is needed well in advance.


How to do it:


1. You first need to switch on the oven and heat it to about 325 degrees fahrenheit.

2. Then grease the sides and base of two loaf pans with butter or canola oil. 

3. Then flour the sides and base of the pan as well.
 

4. Next, empty out all the flour (all purpose and wheat flour), baking soda, baking powder, salt and nutmeg into a mixing bowl and mix them together.

5. Then take the mashed bananas, three eggs, cooking oil, applesauce, vanilla extract, brown sugar and white sugar and mix all these ingredients together in a seperate bowl.

6. You can now add the first mixture into the second mixture and mix them both together. 


7. The chopped walnuts, zucchini and grated coconut can now be folded into the final mixture until they are evenly distributed.

8. Finally pour the batter into the two loaf pans, in equal portions and place it in the oven to bake.


9. Let it bake for about 45 minutes or until a fork inserted into the center of the bread and comes out without any batter sticking to it.

10. The bread can now be left in the pans to cool down for about 20 minutes.


11. Finally shift it onto a wire rack to complete the cooling process

As simple as that :)
