Pecan Zucchini Bread:

















Nothing much needed to explain what Pecans are for our North American friends. For Asians and a few Europeans, who might not know much about them (since it is predominantly found in North America) and need to know what they are, check this out, Pecans 

Anyway, let's get to business


Things you'll need:

1. 3/4 teaspoon baking soda

2. 2/3 cup chopped pecans


3. 3/4 teaspoon baking powder


4. 1 1/3 cups grated zucchini  


5. 2 cups all-purpose flour

6. 3/4 teaspoon salt


7. 3/4 teaspoon ground cinnamon


8. 3/4 teaspoon lemon extract

9. 2/3 cup vegetable oil


10. 1 cup cane sugar


11. 3 eggs, or equal volume applesauce for vegan













How to prepare:

1. Clean and rinse the zucchini properly.


2. Preheat oven to 350 degrees F (175 degrees C).


3. Grease a loaf pan.


4. Mix together flour, baking soda, baking powder, salt    and cinnamon.


5. In another bowl combine the eggs with sugar, mix        for10 minutes. 

6. Mix in oil gradually, then add zucchini and pecans.


7. Fold in flour mixture evenly,do not overmix.

8. Pour batter into prepared pan.


9. Cook in the preheated oven for 60 minutes.

10. Test by inserting a toothpick, when it is withdrawn free of batter the bread has finished baking.
