Zucchini Bread Recipes:

Hungry...Tired of Rice, plain veggies...Need something different...But don't know what...How about some Zucchini? 

Yes I just thought that way a few months back and I did not know how to make some Zucchini bread dishes. So I checked some books and visited a few websites online. I came to find so many different varieties, but I had to do an extensive search.

I know not everyone would have the time and resources to search and find recipes, especially when u r full of hunger, which thereby creates anger and frustration.
So I've just taken the effort to collect recipes from a number of different sources and put them all under one blog. 

Just check whatever you want and get on with the preparation. Enjoy some delicious Zucchini bread, made with your own hands, in an easy manner, in swift time.

Oh yeah, forgot one thing. People reading this blog, might have their own opinions, might know some more recipes or might have some ideas to enhance the taste (not that the methods I've said would make you feel it needs more enhancements), but yeah, opinions are welcome, just use the comments sections. And a little appreciation here and there would not be denied :P :)

Vegan Zucchini Loaf

Vegan Zucchini Loaf:

This one is for all you vegetarians who hesitate to even consume eggs. One of the most easiest dish of the list.

Hardly takes an hour and a half to make. Around ten minutes to prepare, sixty minutes to bake and twenty minutes to cool.

Things needed:


Flax seeds (in case you are wondering what they are)

1. 3 tbsp ground flax seeds 

2. 9 tbsp of water

3. 1 tbsp baking soda

4. 2 cups grated zucchini

5. 1 cup of oil

6. 2 tsp nutmeg

7. 1 tsp baking powder

8. 2 cups sugar

9. 3 cups flour

10. 1 tbsp cinnamon

11. 1 tsp vanilla

12. 1 tsp salt

How to make:

1. Flax seed and water have to be mixed.

2. This mixture is then combined with zucchini, oil, vanilla and flour.

3. Mix really well.

4. Add remaining ingredients and mix thoroughly.

5. Divide batter into 2 greased 8 inch loaf pans.

6. Bake for 60 minutes at 350 degrees.

7. Let it cool for 20 minutes  

8. Serve.

9. Expect some appreciation or give people a punch to the face (don't take this seriously)

Glazed Zucchini Bread

Glazed Zucchini Bread:

Ok people, this is a short one. Zucchini bread tastes good without glazing, but if you want some sweetened effect, then just do as said here. An 8 inch Bundt Pan will be ideal to bake a Zucchini bread. 

A light glaze can do a lot to the Zucchini bread. To prevent the melting of the glaze, allow the bread to cool for around twenty minutes.
Things needed:
1. 1 tsp vanilla

2. 1/2 cup icing sugar
3. 1 tbsp milk
How to make:

1. Mix all these three ingredients by hand until the mixture gets smooth.

2. Slowly pour this white glaze on top of the zucchini loaf, so it drips down the sides of the cake as shown.


And Voila, c'est finis. (Am I saying it right?)

Zucchini Muffins

Zucchini Muffins:

I know many of you might be looking for something, that can be made super quick and can also be consumed for breakfast. Something light, but healthy. Well Zucchini muffins can be the ideal dish you are looking for.

Let's how easily we can make them.

Things needed:

1. 4 slices of bacon crumbled

2. 2 cups zucchini grated

3. 1 1/2 tsp baking powder

4. 1/4 cup vegetable oil

5. 1/2 cups yellow onion chopped

6. 5 large eggs

7. 3/4 cup grated cheddar cheese

8. 1 cup flour

How to Make:

1. Cook bacon ahead, until crisp.

2. Mix all ingredients together in a large bowl.

3. Pour mixture into greased muffin pan.

4. Bake for 35 minutes at 350 degrees.

The most easiest Zucchini dish, that could be made in a quick time. Very healthy indeed.
